In preparation for St. Patrick's day, I needed some brisket to brine for corned beef/pastrami. I picked up a full packer from Sam's on Thursday and cut a 4 lb chunk off the flat Friday night. Since I had the majority of a packet left, I figured I might as well smoke it. Trimmed some and rubbed with just salt and pepper.

Got the UDS going this morning with KBB and mesquite chunks and put the meat on when it got up to temp at 8am. I had to go to Home Depot with my girls for the kids workshop, so I set up my remote viewing app to keep an eye on things while I was out.

Planning to wrap in BP at about noon. I'll try to remember to take more pics along the way. Hoping to make burnt ends from some of the point.

Just pulled it off. Resting on the counter to cool off a bit before wrapping it tight to wait for supper.
