Sorry for the late post, but here are some pics of a 160lb hog we did last Friday night/ Saturday morning in Atlanta for the Beer, Bourbon, BBQ festival. We trimmed and injected with 1 1/2 Gallon of apple juice, 1qt Cider Vinegar, 1c Kosher salt and 1c sugar. Then rub the cavity with a basic sugarless rub. Cooked it racer style with peanut oil and kosher salt rubbed on the skin. 16 hours later we started pulling and the whole thing was gone in about 45 minutes. We had a great time and met some great people that made up for the frozen toes and fingers Friday night.

Looks great, I'm gonna try cooking my 1st whole hog cook shortly. Probably gonna be needing some advice from y'all.
