View Full Version : Introducing the "Dune Spud" aka Turtle Taters (pepper/ sweet onion infused) with mashed potatoes & Roast Beef/Gravy

Well as some of you know it's been a challenging week for me...But upwards and onward we go!

After all the ribbing with the "Dune Spud" I had to come with something. :biggrin1:

Here's the main ingredients.

Baked potatoes lately I core out the center and replace with a onion core (Gives great flavor!) I started with the onions on the bottom then the top i used Jalapeno, red & yellow bell peppers. The left over were sauteed for the cheesy mashed taters.

I used smokey links for the turtle legs and cored potato for the turtle heads.

Now onto the sauteed peppers!

Prepping the roast. I did a jaccard, seasoned with Jack Stack All purpose and spog then in the fridge to rest overnight.

Ok fast forward to this Sunday morning...zero outside with some windchill so I used my chimney and fired up the Big Poppa.

Peeps it was kinda fun. Dang those mashed potatoes were good...gonna be a repeat of that FOR sure, they have the cheesy taste and some nice medium heat.

Thanks...most times i just core out the center long ways and replace with an onion, it does add some serious good sweet flavor i think.
