So I can make biscuits and fatty gravy!

I posted the recipe in this thread the other day...

http://www.bbq-brethren.com/forum/showthread.php?t=204972

I started with some finely chopped onions and the chopped fatty and sautéed them for a few minutes.

Once that was done I added some butter because the fatty had very little fat left in it and then I stirred in some flour.

It took about 15 minutes to thicken. then I corrected the seasoning.

While the gravy was cooking I put some biscuits in the oven...

To top off the biscuits and gravy I did a couple of sunny side up eggs...

I smoked a couple of naked fatties last year for my wife's family's week at our cabin. She told me she heard our 30+ year old nephew father of 2 mumbling "OMG this is the best thing I've ever tasted!"

Very nice Ron. My favorite breakfast combo.
Did you ever try bacon drippings instead of butter for the added fat?

:faint2: I want that for breakfast now. The only things I seem to be missing are: sausage, eggs, fixin's for biscuits, and skills.

Never have leftover fatties when I make them, next time there will be extra!

Yes, this is the way to go. Then you can eat the bacon while you are waiting for the B and G to finish. :thumb:

Man thay looks good! A few questions...

Is it only butter and the fatty fat with flour making the gravy liquid?

Is your biscuit recipe from scratch?

Yep. The recipe is in the link in the first post.

 I cheated. I used frozen biscuit dough. Don't hate me :-D

At least I didn't use gravy mix in a packet :-P

Standard operating procedure: Always make one or more extra fatty for future use.

One of the BBQ guys on Facebook posted a great biscuit recipe that I have used. I don't want to post it here without his permission.

I was running short on time so I grabbed a bag of Grands Southern Style frozen biscuits. They were actually very good.

The Grands Southern Style frozen biscuits are a good substitute for home-made. We have a brand here called "Mary B's" that is also a very good sub for home-made. I usually keep a bag or two in the freezer as plan B.

Yea the Granda are always good. I've been using bisquik lately and they come out really good too. I gotta try that gravy though!
