View Full Version : First attempt using the new toy. Pork Butt and Ribs.

First try using the new smoker. never cooked a pork butt before so im not sure if it came out good or not. it tasted good and was well received by sll that tried it so i guess thats ok but they sre friends so they could have just been being nice lol. sorry no pics of the ribs afterwards, beers took over. butt had a total smoke time of 5 hrs before being wrapped until about 188degrees.

Did you run it on splits or charcoal? if you were running splits did you have to cut them down?

was thinking the same thing.....maybe its a 4 story house? lol.....thats a neat little smoker u got there tho! i like it and the meat looks great!

From the looks of it doesn't seem that anyone was trying to be nice you. That smoke ring is killer. Great job!!

First, welcome to the Brethren! Your smoker looks cool.
However, dude, I hate to tell you, the guys above were just being nice. I'll be honest. That pork butt looks like crap. Really bad. May make you sick. I tell ya what, package the remains in some dry ice and send it to me for proper disposal. I'll make sure it gets discarded in such a way that neither you or any of your loved ones will be in danger. And, since you're new here, I'll do it for free.

Seriously, it looks really good. Did it pull apart easily? I think you said you cooked it to 188 degrees, which is sometimes pretty low for it to pull apart. I find closer to 200-210 works great. HOWEVER, I don't go by temp. I cook until a probe (ice pick, thermometer, etc.) can be inserted and goes in "like butta," then I let it rest an hour or so. The meat will fall apart.

Anyway, like I said, I can't tell, yours may have done that at 188. As long as the eaters were happy, you did well.

That is a very cool looking smoker, and it looks like you already have a knack.

i ran it on charcoal and chunks of cherry and pecan - i assume with the space i would have to cut the splits down though.

haha - actually its a townhouse area (3 floors up) so there are strips of 5 townhouses per block.

haha! thanks for offering the help of bad bbq disposal! will keep that in mind for future cooks.

it did pull apart fairly easy - it was right before i had to leave and bring it to the super bowl party so i was happy it atleast got to that point before i had to let it rest, pull it and then leave. i was hoping for 190+ but it didnt get to that unfortunately. i've read on the 'butta' test, i think next time i will try that along with the thermapen and see how close my guess is - not to confident on look/feel yet

If that's your first 'crack at a butt' :rolleyes: you're good to go. Looks great, congrats! Ribs look like they're smokin nicely too.

Some times the beer prevents the pictures. As long as the beer doesn't prevent the eatin of good Q your OK. Nice lookin pork!

I've had that same Brinkmann Trailmaster Vertical since November. I did all of the RTV and Nomex sealing mods and mine doesn't leak. I have a wood source in Las Vegas that sells splits about 3/4 size that fit my fire box just fine. I start with a full chimney of Kingsford blue and go the rest of the way with just splits. I get perfect thin blue and the Q tastes great. If I don't feel like tending the fire for hours, I can always use the Performer!. Great job on that cook and welcome to the Brethren.
