Every year a handful of judges get together in Young Harris, GA at Brasstown Valley Resort on the weekend of the KCBS contest and GBC Awards Banquet. We rent a cabin (actually 2 this year) and we spend the weekend together enjoying good food and companionship. Every year we bring way too much food but last year was the first year we had a smoker - I brought my GMG Davy Crockett. We made multiple fatties during the weekend and this year we have plans to do the same. So naturally, trying to decide what fatties would be good I turned to you fine folks. Yesterday I decided to smoke an Italian fattie and since I had the BGE fired up and strong recommendations from everyone here I added a meatloaf to the cook as well.

I made a bacon weave:

Rolled out the sausage

Added mozzarella and parmesan cheese and a sprinkle of Italian seasoning:

On top of the cheese I added pepperoni:

And on top of the pepperoni I added some more cheese (can you tell I'm getting excited):

Rolled it all up into a log:

And put the fattie and meatloaf onto the BGE at around 300*

Cooked to 175*

And sliced - I didn't slice the meatloaf yesterday. That's going to be dinner tonight. Yesterday I made the fattie, a meatloaf, chili and vegetable soup. We're going to eat well this week.

Well, Toast, it wasn't entirely bacon wrapped. I've always laid strips of bacon across meatloaf. This particular day I had cooked 1/2 lb of bacon for the bacon fat needed in my cornbread. I started laying the second 1/2 lb over the meatloaf and ended up covering the entire loaf. It turned out very good so I'll do that again. We ate meatloaf tonight for dinner and everyone is right - once you smoke meatloaf you'll never go back to oven baked!

Looks great Julie. My first fatty was similar, except I added some smoked tomato pesto for a sauce, and sauteed mushrooms and onions to it too.
