What is your favorite stuffed fattie combination? We had 4 hogs butchered and I got around 300 lbs of homemade pork breakfast sausage to use up.Looking for ideas to change it up a little bit.Thanks in advance.

I just made my first one. I through on some cream cheese. I put peppers and red onions in the mix with garlic. I used peppercorn bacon to wrap it.

Doing the Italian tomorrow, homemade italian sausage, ricotta, basil, red peppers and onion filling with bacon weave but I've been thinking for sometime about doing the same with copocola and meat glue. Doubt that it could taste better but I'm sure a great looking wrap could still be fashioned. This may be something that would be worth the effort of an extra long roll.

Fatties are A Super Bowl fav for sure . . . Which I won't be attending as usual because I work for a living!!!!

Wish the NFL WOULD Eventually GET THE MEMO THAT MOST FOLKS HAVE TO WORK MONDAY!!!

It was 4 hogs.The four together weighed 1100 pounds.I only had choicest cuts and ground pork and breakfast sausage made.

I stuff mine with chopped green, red & yellow peppers, onions, mushrooms and a Mexican 4 cheese blend.

Agreed. But if I had to choose a stuffed fatty. I'd go with homeade blueberry muffins coated in maple syrup. Not sure where I saw that but sure is tasty.

One egg scrambled, cooked thin and flipped in one piece, a teaspoon or two of marinara, mushrooms, green onions, and cheese, all rolled inside. Hits the spot for breakfast during a long cook.

This probably won't come as a surprise to those of you who know me, but I have only done one stuffed fatty :shock:

It was for a bash at Parrotheard's house in 2006 and, as far as I can tell, is the earliest recorded stuffed fatty on the Brethren.

Oooo.... I forgot about my blueberry pancake fatty!. I guess I didn't think it was stuffed since it was rolled!

Someone on here did this and I modified it and made it for the sausage category at a couple of competitions and won with it.

I do believe we have the Honor of knowing the originator/inventor of the Fatty. The rest are variations on a theme.

Well, as far as I can find, the inventor for the fatty was Brother Smokey Pig, and Brother Big Dog named it.

I may have the first stuffed fatty on the Brethren as far as I can tell.

Thank you all for the Great ideas. I appreciate it! Good eats rite there.I love breakfast sausage but dayum,we got a lot to use up! I guess I will have to start a thread,,,,,the story of 300 fatties! Ha!

If you're gonna make them often...I highly recommend making a fatty piston..ala cowgirl style.

Her latest...I noticed is a fancy stainless steel job....mine is just pvc with a washer attached to a long stove bolt.

As far as favs...mine is just hashbrowns, sautéed peppers, onions, sometimes scrambled eggs stuffed in to breakfast sausage.

With 300 lbs of fatties, you're gonna need a lot of variations to keep things interesting.

Can I suggest a couple categories?

Say, something like sweet, savory, cheese to start?

Sweet:
Blueberry pancake was already mentioned. I saw a brethren here do a pecan pie fattie (which sounds fabulous to me, but I haven't done one). Waffle with maple syrup would be tasty as well.

Savory: mixing in sautéed peppers, onions, shrooms is yummy. One of my favs is caramelized onions and peppers. Mirepoix plus just about anything tastes fabulous!

Cheese; cheese makes everything gooder! Cheesesteak fatty above is an awesome idea! Add cheese to any of the savory items to change things up. The number of different cheeses to try is nearly infinite. I happen to enjoy cheeses like gruyere and jarls burg in my fatties, but cheddar, cream cheese and American work dandy as well.

We use shredded cheddar, homemade bacon bits, and a can of chopped Ortega chilis. Hit it with some Yardbird rub, and cook to 160.

Put the 1lb sausage chubb in a 1 gallon bag and flatten evenly with a rolling pin. Cut the bag off and stuff the roll.
As for the blueberry pancake, either cook yourself up blueberry pancakes or thaw out a frozen blueberry pancake. Oh and use maple flavored sausage!

Speaking of fatties , I smoked my first one today . It was a Country Girl Clone . Got the recipe from Country Girls Blog . All you ole timers are very familar with her blog, if you are a newbey like me and jus joined this forum I highly reccomend you check her blog out . Her recipe was a breakfast fattie , I made it a supper fattie . Made my fattie tool from pvc piping, and she has the plans for that tool on her blog, simple and cheap to make . However she has a fancy stainless steel tool . It turned out ok, not as pretty as country girls so I will not be posting any pitchers . It was delish, with a fried egg on a tosted sesame seed bun . I wilt some spinach, so I can get more in. The add some onion and blue cheese crumbles. I have also used Kale once when I was out of spinach. It worked out great.

BTW: might want to save a couple of those uncooked fatties and use them to make sausage gravy. Captain Ron's lovely picture was a good reminder of the wonderfulness of a delicious sausage covered in gravy!
