Last nights hot and fast brisket!

Put a 12 pound brisket on at 4:15 pm yesterday and took this bad boy off at 9pm served at 10
Turned out very tasty not dry at all! The last pic is me toasting to a tasty brisket
Oh yeah ran the WSM 22 at 350 the whole way!

Yes i did, when it hit 165 I wrapped in two layers of foil for about 2 hours and took it off at 200! Not perfect but everyone said it was very most and tender and had real good pull to it! I was very happy with the end result.

That's the same technique I use. And by that I mean don't serve until 10pm and everyone is so hungry they love your cooking! :becky: just kidding, looks great!
