Found a discounted little bit of a flat the other day and froze it. The sun is finally shining here so...

fill up the 14.5 w/ Cowboy and cherry. Gonna keep temp.s on the low side due to its size and I've got all day anyway.

Took the (cool down) opportunity to add a naked Jones fatty and some sweet italian sausage on the lower grate.

I don't see anything wrong with the color on that flat, nor the fact the WSM was cooking at 290 degrees. :p

I typically cook on my uds and kettles at 300+ degrees.

Nice color on that little chunk of beef. Let her run at 290*. Just make sure you don't doze off again when it gets close to done. Small window of tenderness on those small flats.

Where's the salt and pepper?

Neat little cook.

I use a little more black pepper than that, but, still, I bet it was good.

ha- $4.99 is a steal around here. :-P

It came out "acceptable". IT was 204 but wasn't probing tender so I finished it in the over in foil at 250.

Then a minor plumbing emergency happened a while later so I shut off the stove and left it in there. IT was 106 when it was finally sliced.

It was drier than I aimed for, but not as dry as the pics look, and it tastes good. This is my 3rd brisky, first tiny flat-only, and first one on the 14.5 WSM.

Looks good to me. Great smoke ring. I still haven't tried a brisket. Mainly due to the expense and my lack of experience. I be pissed if I messed up a $50 piece of meat. I need to try and find a mini flat like you did.
