View Full Version : Favorite "quick" smoke (2 hrs or less) foods

Could have to drop everything and head to the hospital with my expecting wife anytime in the next week. Weather is supposed too be perfect for smoking this Fri-Mon and I want to take advantage though!

Don't want to lock into pork butts, brisket, or ribs, then have to abandon everything. Looking for some quick ideas I could do that shouldn't take to long. As my buddy said..."if you want to know when that baby will come, just throw on a couple big pork butts. Sure enough it'll happen 3-4 hrs in!"

Chicken whole/wings/quarters for sure, thick pork steaks, tri-tip are no-brainers. Gotta be missing quite a few though.

Appreciate any suggestions!

Love eye of round smoked to 130 medium rare thin sliced for sammys and will last all week

Smoked meatloaf is great, and then you have leftovers, if you make enough. Great for sandwiches.

As said above, Tri-Tip, Meatloaf, and Chicken are all quick cooks. SLC Ribs are 4 hours for me, Beef Ribs are 6. Sure that is getting too long for the time you are looking at.

I love me some pork loin. Preferably brined or injected, then hot and fast at 275 - 300 until no more than 140. Reverse sear at the end for a nice crust. Basically, you're just treating it like prime rib.

Oh no, don't misunderstand me! I mean the ones I listed are obvious ones that definitely in the "rotation". I'm just looking for other ones I may not know about. Like believe it or not, never done a fatty EVER.

And I'm with you on the TriTip. Dalmatian rub, sometimes even a little coffee, oak smoke, beans and rice. Doesn't get any better.

I was running short on time and had a slab of spare ribs thawed out so I rubbed them and grilled them on my 22.5 kettle. I was really surprised at how good they turned out.

Brined in apple juice, salt and sugar for 8-12 smoked to 155, wrapped in goal and set aside is pretty awesome! Slice it up later with plenty of leftovers.

I do 4 of these a day they are great. I put mine in a pan and cover with my rub and then put a half a cup of salt, pepper, and Cajun seasoning in the bottom of pan and about an inch of water and smoke till they reach 135 then cool and slice thin and cover with the au jus. We store them in the cooler and just heat about a pound at a time. Truly "off the hook".

I can't beleive I'm the first one to say this, but ABT's rule. Stuffed Jalapeno's are hands down my go to "quick" thing to smoke, then Fattie's.

Have not seen a double smoked ham on the menu, also good for all kinds of leftover ideas. Just a word, some have trouble with heavy smoke when expecting, has she had any smoked food lately without problem?

Seared tuna steaks, smoked chicken gumbo (do cut up pieces for quick smoke-cook), make some sausages!

Spatchcock smoked chicken takes about 2 hours to cook. And it tastes amazing! I use plowboys yard bird rub.

Edit: and you can use leftovers to put in that gumbo Sausage Warrior mentioned above. :mrgreen:

Smoked Meat Balls. You can freeze them and do a quick thaw in the microwave and mix them with various meals, spagetti, BBQ sauce with a side or two, make a meatball sandwich, slice throw some on an anemic pizza you picked up, have a few in a bowl with a couple chunks of cheese for a snack, etc.

Mo-Dave knows what he is talking about. Not too many people complain about my BBQ, but I've always gotten rave reviews on my stuffed peppers. I like to make them with leftover pulled pork if you have it.

I started following this thread to see if there were ideas that would work for our family. Thanks to all who have made suggestions! Would echo the meat loaf and meat ball ideas...when smoked, they turn into something completely different from their baked counterparts! Will be trying the pork tenderloin soon...I'd always done mine hot and fast on the grill to get them medium rare.

Would also suggest that since your lives will now be changing and that things you can do to help improve efficiency of your limited time, would be helpful to batch cook whennever possible. The effort required to make one meatloaf (or whatever) is nearly the same as the effort to make four. Cook once, then stock the fridge and freezer so you have treats in waiting for those days when you may not have time or energy to cook much.

Also....Just curious...has the blessed event occurred? If so, how did everything go? Hope mom and baby are doing well!

On my 26 Weber with firebrick set up and bottom vent 50% open I was able to do 1 rack of baby backs in 1.5 hrs and a rack of St.Louis in 2 hrs. Best smoke ring I've ever gotten as well. I noticed you have a 26. Might give it a try.

Yep, she's been eating BBQ all through, but has asked me to dial down the smoke in certain things as you mentioned.

That being said, it's no longer a concern because our BABY BOY arrived early yesterday! Home with Mama and doing great.

She's asked for grilled burgers with Maker's Mark BBQ sauce tonight and then going to do some TriTip and Ribs a couple days this weekend. Plan to give my new Davy Crockett a workout this weekend, since I haven't been able to use it yet.

I just moved to this area of your woods. I'm going to smoke a pork loin on Friday and cook a pork shoulder on Sunday. The leftover pork shoulder will be come some nice chili for during the week.

I'll second the vote for fatties, but I do a fatty along with almost anything I'm smoking. If nothing else, it can be crumbled into queso and is awesome.
Slice off some for fatty breakfast sandwiches and have something to eat while your in route to the hospital!

Another thing you can do is high heat ribs. I have done baby backs or loin backs at 300-310 and they take around 1 to 1 1/2 hours. The only thing is that you should avoid rubs with high sugar content.
I usually do them with a steak rub and serve them dry. My wife actually prefers them to slow smoked and/ or sauced.

Butterfly a pork tenderloin, give it a light coat of olive oil then add your favorite rub. Sear it on a screaming hot cast iron skillet for 1 minute per side then put it in your smoker for about 1 1/2 hours. Tastes great!

I've been a fan since the 70's, so whether they are in STL or LA, makes no difference to me. I just want them to have a winning season for a change. I hope it's coming soon...

I've invested every home Sunday in that team since 1995. Missed maybe 15 home games since they've been here. If Stan moves the team, I'm going back to being a Chiefs fan. Team has been dreadful since 2005 and still draws 58k per game. Can't root for an owner who does that to us.
