View Full Version : looking for some simple brisket and pork rubs

Thanks in advance. Brethren im looking for some simple rubs that i can make myself at home for brisket and pork. For my brisket i want something that will help give me some great bark and have just a slight kick of heat to it. If you all have some simple rubs that you dont mind sharing it will be greatly appreciated.

Can't get any simpler than SPOG. Since you want heat throw on some hot pepper powder.

SPOG is my go to rub most every time. simple is better IMHO, sometimes add a tbs of H death dust,. I have mostly never had a difficult time getting a decent to great bark just using that combo.

SPOG. I dont why i didnt think of that earlier. How much of each do you all typically mix up?

My typical batch of the stuff that I mix-up is:
1.5 Tablespoons Kosher Salt
2 Tablespoons Coarsely Ground Black Pepper
2 Tablespoons Onion Powder
2 Tablespoons Garlic Powder (Granulated Garlic)
2 Tablespoons Paprika
1.5 Tablespoons Cayenne Pepper

After that, I just go with how well I want to coat the meat I'm cooking. This stuff works great as a dry rub for chicken wings, too!

For how you want the pork/brisket to taste when you eat I find it is actually more important as to what you put on the meat at the end before serving vs the beginning. Especially for pork. Even hitting the outside with a hot spiced rub might not yield an overall semi-kick when you pull the whole butt. So definitely consider after pulling/slicing hitting the meat with something at the end too :-D.

Salt & pepper, Slap Ya Momma & pepper, Mckormick Seasonall & pepper, Kosher salt.

When I SPOG,I just sprinkle each in its own layer. I don't premix amounts.
