A little while back, I got to thinking about trying to make a sausage that had the flavors of pulled pork, sauce, rub, etc inside a sausage.

Here is what I came up with. Wasn't going to do a big batch since I had no idea how it would come out. 2lbs of pork (butt and belly pieces) and 2% of the pork weight in Smoking Guns Hot rub.

Through the grinder and mixed with 1/4 C Head Country sauce and 1/4 C apple cider

Stuffed into natural hog casings

Let them sit over night in the fridge and put a couple on the grill to see how they came out.

Pretty happy with the result.

Think they would be much better with a run through the smoker, also need to up the % of rub and decrease the amount of cider. They were a bit sweet for my taste.

All in all, they are pretty good and good starting point for this little project.
