View Full Version : My New Year's Eve Snack

This is what I usually make for the Super Bowl but decided to make it for New Year's eve too.

Used some Swamp Dust to season the pot. (Thank you to Brethren Wickedcajun and Cajun Ty for recommending this awhile back)

Oiled and seasoned some corn with Big Poppa Little Louie Black Pepper, Garlic and Salt seasoning.

used my BPS drum...(old picture of the drum)

Seasoned the pot and started the onions, garlic, smoked sausage, tatoes, lemon juice, salt and Swamp Dust...

when the taters were almost tender I added the crawdads...

then some shrimp....

rotated the corn for crisp bacon...

That's it... crawdads, shrimp, taters, smoked sausage and bacon wrapped corn.
Served with garlic butter and some crisp bread..

There were 4 of us celebrating, we stayed awake til 2 playing cards. Not too exciting but nice for a change. :)

I forgot to mention, the Swamp Dust was really tasty. Had nice heat to it!

i use swamp fire crabboil.that stuff is killer. i make red beans and rice with pinto beans and add the swamp fire to taste. great cajun kick.

that looks great, I love a seafood boil. I do have to say though I have never seen bacon wrapped corn before but it sounds good.

I've never heard of that boil mix, but if it rates highly with you folks I'll have to try it over my usual Louisiana Fish Fry Products..

Beautiful meal and it sounds like a wonderful evening with friends. Playing cards until way too late is always a winner with us!

What did you use to secure the bacon to the corn?

Thank you Bruce, I used one full strip of thin bacon on each cob. Tried to cover as many kernels as possible with the bacon. Didn't use anything to secure it, I just start the corn cooking with the seam side down then turn when it's crisp and set. (hope that makes sense :))
The bacon drippings keep the corn kernels moist while cooking.
