Hey brothers and sisters,

Happy New Year!!!

It's fast coming to be a tradition that I end up doing a whole pig for New Year's Eve. This year I did it in my Lone Star Vertical offset and took it to my bro's house for a NYE party. You'd think the pig was a celebrity with all the pics people took and I heard chants like "Facebook, Instagram" and of course I thought BBQBrethren. It came out outstanding and without further ado here is the pron.

Freshly slaughtered 38lb-er

Brined it

Took it out the brine, season with SPOG & Paprika

I haven't figured out why a whole hog takes less time than a shoulder or butt or picnic

It was 38lbs. That's teeny.

Its shoulder or butt or picnic would have taken even less time.

Yes sir. Smoked until I hit 185-ish in the hams and took it off. Wrapped in foil and let it rest 1/2 hour or so then pull/serve. We dont eat the skin.

Thanks! One of the reasons I went withe the 24×30 was to be able to do a whole pig. Its good for up to a 40 lb-er or even larger pig if I cut the head off.
