View Full Version : Brethren help -- Chicken for tacos

I have been slated the duty of bringing a crock pot of chicken for tacos to a family xmas of 40ish people. How would you guys go about preparing the chicken? I picked up 2 packs boneless and skinless breast meat and and thighs. There will be other food there so it doesn't have to be enough to feed everyone.

Just like fajitas. Direct and indirect grilling after a brine or marinade. Fire up yo grill! !

Butterfly the breasts, hammer flat, and marinade in Italian dressing, onions, salt, garlic, crushed red pepper, and lemons. Cook on super high heat for 3-5 minutes a side and slice. Incredible flavor, super easy.

I just did this yesterday:mrgreen: (I use whole birds) I seasond the bird inside & out with goya adobo (green lid). Put 5 golf ball size ball of foil in the bottom of the CP put the chicken on top lid it up turn it to high and walk away for abut 5 hrs. Remove the bird (Falling apart done) so a pair of big spoons will be your best friend. Slip out the bones rough chop the meat add a little more adobo a can of hatch chilies, chopped cilantro, S&P. Bust loose the soft corn torts and yuor choice of toppings I'm a squirt of lime, cojita cheese & guacamole with a drizzle of Crema.
