Wow, looks great. I've never done tri tip, but I saw the wally-world by me has them now. Do you cook to a certain IT, or by feel, or what?

Cook it how you like your steak. So yes cook to an internal temp. Personally I like to do the reverse sear to a medium rare exactly the way Adam did his.

Are you coming over to the 'dark side ', ie,
more pink in your finished beef?

I dont know if its the best beef I have made but it was VERY good.

I have always liked mine more pink, I am converting my wife.

She says " I dont know about this" but I had to put my son to bed and when I can back out it was alll gone. :thumb:
