Had a few mates over this evening for Q.

Fuel :- Wood - Ironbark
BBQ :- Silver Creek reverse flow offset / Stoker - Rocks
Meat :- 6kg Wagyu brisket, pork ribs, cup cake chicken

Excellent cook, everything looks awesome!! How long on the brisket and at what temp? I understand they have a shorter cook time and I have ordered one. Thanks for posting!

Cook took 17 hours @ 225 ish. Marbling wasn't a high grade (6 of 10)

I will be interested in what you think of the Wagyu.
It did little for me, almost too rich.
The Oxen from Cape Grim was wonderful.
Nice smoker you have

Not an easy thing to find and compare. The local comp guys like them.
Still looking for somebody who can source Cape and other notables locally for a cook.
Sounds like you still have your SC :-D
