When I started out on the internet the main problem was "how do you communicate feel" in order to tell when your brisket is done over the internet?

This was when brisket was damn 88 cents a pound and I didn't like wasting it then... imagine now.

So many tried the Night Train. Even a few experts tried it and improved their art.

It is THE way to start out.... by not actually BBQing it. Crazy huh?

Will the brisket come out the way YOU want it at 275 for 4? Maybe, maybe not... but something too tender is actually what we are after here. Because then all you have to do is remember the "feel" of a too tender brisket in its foil or paper pouch and dial it back to where you slice it your way.

Let me remind.... and I have proven it before... the NUMBER ONE problem we get in here on the "Help my Brisket Sux" pleads is when the Pit matron has not cooked it enough. Brisket is weird in that it can appear dry and tough making you think you had a flare up you didn't know about or just plain screwed up your brisket.

Great sound track I half expected to catch a glimpse of Gypsy Rose Lee taunting us. Very educational as well thanks that should help to explain Probe tender to those who can't seem to grasp it.

Remember... I said I pulled it before the time I think BECAUSE it probed the way I wanted to to probe...

which cut at pencil thin you saw the results.

LOL My wife was preggers when it was shot and I left it on the counter after cutting it once. I knew it needed to cool and should have put it back in the foil bowl with the liquid after I broiled the top.

She dug into it while I changed batteries and I stepped out and the kids and her were eating it... I was a bit angry. They had never done that.... I mean their were cords everywhere... halogen lights on, tripods, two cam and a monitor (ipad) all pointed to the brisket and she just ups and eats it.

The MKT and respect for our armed forces has changed my musical spectrum to include music from the big band era to Vietnam Sly Stone stuff... its piped out over the intercom when the MKT is set up. Like a step through time

U're welcome.... and to think I came up with this when brisket could be had for under a dollar a pound.

brisket has always been my nemesis. I hit it the first time years ago and figured it was a easy. never again. gonna do the train to learn the texture and try again once brisket is under $4/# here.

Yeah... dang thing is.... do not go out and buy a flat these days.... they usually charge a premium for that. That is why I used a point/flat end for the film here..... i chopped a packer in half. I also think if you can afford it... its perfect for illustrating the contrasts between the two cuts while literally being connected to one another
