View Full Version : Our Signature Fire By Night BBQ "Brunswick Stew"

Good morning gentleman. Seems like everybody this time of year is enjoying the comforts of Brunswick Stew and we are no different. And since I've got about 5 Gallons worth of Orders to fill today I figured I'd post up some pics and let all of y'all come along for the ride.

The recipi I use is one my family has had for close to 100 years now. Going back to the early 1900's as far as I know. I pride my self and my brand on cooking tradition Carolina style BBQ and my Brunswick Stew is no different. It's cooked on a wood stove, over hardwoods similar to the way it would have been done many many years ago.

So we start with a 5lbs bag of red skin potatoes. And 3 pounds of sweet onions. And about 2 pounds of thick cut bacon. Dice it all up with a stick of butter and on the stove it goes.

While that's on, I'm getting butter beans, corn, diced tomato, our very own BBQ, pulled chicken and diced veal ready to go as well. There are a couple other ingredients as well that are not part of the original recipi, but it seems to work very well with it.

I'll update as the day unfolds.

So at this point I've got everything in the pot and on the stove. There really is no temp control that I'm concerned about, just keep your fire going and let the potatoes be your guide. When they get tender your good to go.

Along with everything else I'll throw in salt and pepper to taste, a little of my vinegar BBQ sauce and a dash of hot sauce.

Usually for a batch this big my cook time is usually around 6-8 depending on how vigilant I am about tending the fire.

It's all done and wrapped up. Cook time was right at 7 hours. The smell is always something out of this world. I take mine with a couple saltines and corn bread.

I know there a bunch of guys with great Brunswick Stew recipes but this is my take and is always well received.
