I have been looking for recipes for snack stick recently and would like to make a small data base of homemade recipes (not commercial) recipes here because most people have the ingredients in their cabinets already and it is so much cheaper to do this way. So I will start it off with the 4 I use most often

To each 5lb raw meat for these recipe add 1 tsp Sodium Nitrite (Pink Salt, Insta Cure #1, Prague Powder #1)
You can also add 1 tsp of liquid smoke per 5lb of meat.

Slim Jims - very similar to the name sake in flavor. (modified from Kutas book)

This is enough for 10lbs raw meat
4 tbsp paprika
6 tbsp ground mustard seed (may use mustard powder)
1 tsp black pepper
1 tsp white pepper
1 tsp ground celery seed
1 tbsp mace
1 tsp granulated garlic
3.5 fluid oz salt
1.5 fluid oz white sugar
Opitional - 3 fl oz powdered buttermilk (can be found by the baking items at Walmart and gives the stick that tangy flavor found in Slim Jims)

I also add 1 tbsp cayenne

ITALIAN / PEPPERONI FLAVOR STICK - 5LB RECIPE

1 tbsp black pepper
1 tbs cayenne
1 tbs mustard powder
1 tbs crushed fennel seed
1 tbs crushed Anise seed
1 tbs granulated garlic
1 tbs granulated onion
2 tbs paprika
1 tsp red pepper flakes

CAJUN STYLE - SPICY BUT NOT HOT - 1/2 FLUID OZ PER LB / MEAT - 10lb batch

1.4 fl oz salt
0.5 fl oz Black pepper
0.5 fl oz cayenne
0.5 fl oz MSG
0.5 fl oz gran. garlic
0.5 fl oz gran onion
1 fl oz brown sugar

SOY SAUCE FLAVOR - per pound of ground meat

1/2 cup soy sauce
1 tbs brown sugar
1 tsp granulated garlic
1/2 tsp ginger
1/2 tsp black pepper

I got on the snack stix craze last year. Made up a few batches, using different recipes and could not find one I really liked. Since the weather is getting cooler for us, I'll try a few more batches, cold smoking a couple hours using different pellets then finish off to get to temp.
I am not a fan of Slim Jims but I'll give the Italian / Pepperoni one a try. I do have Kutas' book and the info is informative but most of the recipes are not for me.

In the beginning, I usually only make a pound or two at a time until I find one I like.
