Received a nice looking butternut squash from my CSA this week. Turned it into this, served with a sour dough grilled cheese Sammy.

My wife just made some butternut squash soup last week with some squash from our CSA. It was very good. I had actually never eaten butternut squash before. Since we joined the CSA I can say that about a lot of different vegetables now. :thumb:

Thanks! We make it often and love to experiment with different ingredients. This is the first time we added goat cheese. My wife LOVED it, it was good but I thought it took away from the great flavor of the squash.

I am kicking myself about the bacon. I make a butternut squash soup and it is wonderful. I even add the goat cheese. For some reason I have never added bacon, but I will. I do add apple and carrots in my soup and it really adds a nice touch. I always roast the squash on the smoker as well. That is another nice touch.

The recipe is very simple. I took the BN squash and halved lengthwise, removed seeds, brushed with EVOO, sprinkled with S and P and roasted until the flesh was tender (30 min). While that was roasting I sautéed a med yellow onion (minced) in butter, when the onion was ready I added 3 cups of chicken broth and brought to a simmer. If you have an immersion blender you can add the squash to the soup and puree, if not, purée the squash in the blender and then add to the pot. Simmer for 10 minutes and then slowly add in about a 1/2 cup of heavy cream. Add S and P to taste. I served with crumbled bacon, goat cheese, and a light sprinkle of nutmeg.
