I just built a mini uds this past weekend and i had issues with getting the temps to stay up to near 300. Had all 3 vents open on the bottom full basket of charcoal 8 in diameter 12 in hig. Used Kingsford blue and 4 hickory chuncks cooked a pork butt 8lbs took 8 hrs. Help with the temp please??

How big are your exhaust holes on the lid, are you getting good air flow?

Besides mentioned above, did you cut out the bottom of the pot or drill holes. Could be restricted heat/air flow. Pics would help.

I don't see anything wrong with an 8 lb. butt taking 8 hours. Sounds about right to me, unless you were trying to go hot and fast. If so, I would do what the others above mentioned. How many lit coals did you use to get the fire started?

Shortly after you first dumped in your chimney were you able to get up to the higher temp you wanted? If you were and then as time progressed your temp went down and you were unable to maintain the higher temp it could be from the KBB. I have a WSM and I started out using KBB, but I like to cook up around 300 and I was always losing temp because of the ash production of the KBB. I would say you either have an ash issue or an airflow issue.

Pictures and which smokey joe are you using a silver or gold? Are you using a difuser or the steamer insert from the tamale pot?
