Cooked hot and fast in the reverse flow stick burner. 325-350. Put in pan and covered when color was where I wanted. About 4 hrs. in. Took of cooker when probe tender. Between 6 1/2 and 8 hrs. Kept covered and rested for about an hour before pulling and slicing.

The picture of the sliced brisket alone, not to mention the pulled pork, set my mouth watering. Damned fine rig you've got, and it looks like she's pretty well dialed in with the grub you're serving up!
