View Full Version : Advice needed: two butts bad first brisket

Planning on smoking two butts and a brisket tomorrow to eat between 4 pm and 5pm. Torn on if I should try bludawgs method and cook the butts at 300 or start a lot earlier and smoke at 250. Brisket utrimmed is 17 pounds(best one I could find) and the butts are a total of 20 pounds. Looking like a 12 and 8 pound split. Any advice would be appreciated.

I'd say go with what you are comfortable with. I still haven't tried the hot & fast method although I would like too I always end up cooking low & slow.

What are you used to doing? I like 275-300* myself- Brisket will take 7-8 hrs and Butts 10 hrs or so at 275-300*.

stay in your comfort zone, plenty of time to practice a new method when you are not serving to others.

Turn the pit up to 300 and let er rip tater chip, butts take about 50 min Lb @ 300

I'm with Blu. Nothing to fear cooking hotter if you want to. Nothing changes except how long your cook takes. You can do everything the same, end product will be the same, just a bit quicker

I too would like to get one practice cook in high & fast before serving others but I do want to try it.

Any advice would be appreciated.The only real reason to cook at 250 instead of cooking at 300 is if you want a longer cook. Either way you're cooking to probe tenderness, one of the two will just get you there quicker.:wink:

It won't be a problem if you cook for PROBE tender on both pieces of meat. Just check on them more often until you get some experience on how quick they cook at a higher temp. Just a quick peep and a quick "feel" should do it to keep your temps up. Good luck on the cook!

It's great. The best of both worlds. You get the faster cook times of H&F without the narrow window of perfection. I'll put it up against the other 2 methods anytime.
