Ug. Way too early.

Sunday brisket

Fire is started, going to put the brisket on in a bit. Cherry and Hickory I think.

I set up everything last night. Rubbed with garlic, salt, and pepper. Already on my second cup of coffee. :wink:

Never too early for brisket...great way to wake up at the butt crack of before dawn and cook some bbq...

For low and slow cooks, I have been picking 18lb briskets so I can start them in the evening, start the smoker and get a full nights sleep :)

This was at the 3 hour mark. Brisket was around 130 internal. It is about 5 hours in now and internal is 150. Smoker temp is staying around 225. Started spraying it with some balsamic and worcestershire sauce.

Mine went on at 10pm - its almost there and needs a good rest, as do I.

7 hours in. Brisket is in a stall. Trying to get my fire temp up to 250-275.

It can be SO hard to get up at dark-thirty on a work day, and so easy to get up on a cook day!

Brisket was done in about 9-9.5 hours. Then I put on the wings, sausages, and corn.
