Does anybody know if it's OK to brine cure a ham with cure #1 in a SS stock pot? I don't have a food grade bucket, and I'd rather not have to run out and grab one.

Yes, I have used stockpots in the past. Stainless steel is non-reactive and will work fine. Just make sure it fits into your refrigerator.

Check out http://issue15.smokesignalsmagazine.com/ and there is an article on making ham. In one of the pictures there is a stainless stockpot being used.
