I smoked my first chicken on my UDS yesterday.

I did it beer can style without the beer can. I used the Superchicken Wing Rub from Dr. BBQ's Slow Fire book. Cooked at 275-300...I'm having some trouble getting my drum to run higher with 2 intakes fully open...:confused:

Family liked it, so I'm happy.

Great looking cook. You have a pic of your drum. We might be able to help with temp. It might just be as simple as using more lit coals to begin with.

I used a full chimney. And I made sure that when I filled my basket I shook it down...maybe that's a problem? I get a bit higher temp if I close the exhaust about half way.

Looks good. I made my first chicken quarters about 10 days ago using oakridge bbq rub and I'm hooked. I've made it 4 times since

Good looking chow! If you're only cooking one chicken or a few parts then you need to build a mini...use way way less fuel.

The chicken real good, if you want to run hotter put the air to it and leave the lid off on start up until the temp gauge is passin 250. When it gets to 300 choke the valve to 3/4 open it will settle in 325-350.

^^^^^YEP^^^^^^ That's what I was going to say. just let your drum get hotter before you put that lid on. If this doesn't do it let us know.
