Nothing fancy... cooked some spares while camping last week.
Started the fire in the tractor tire rim early for breakfast...

Prepped the ribs after breakfast.....went the simple route, brushed the ribs with bacon drippings then seasoned with coarse salt and cracked black pepper...

I let them hang out on the low heat side of the fire...

flipped and rotated the ribs every so often. Added a log to the fire when needed...

I forgot to soak some beans the night before so I had to doctor up some canned beans...

The ribs roasted for 7 hours, came out very tender and moist. I liked them better than the last slab of campfire ribs I did but maybe I was just hungry from smelling them cook all day. :)

We use a tractor rim too! Love cooking over an open fire like that, In fact we just wrapped up 3 days of camping, did almost everything over the open fire!!

I love when you cook campfire spares. I really need to try this sometime with my fire pit. The corn is just over the top. I love fresh corn on the cob season. We gobble it up many times a week here.
Thank you Husker! The ribs turned out really tasty this time. I was pretty hungry by the time they got off the fire though. lol
Also loved the corn. I had planned on buttering the cobs but they tasted so good just roasted.
I bet you do get some awesome sweet corn in your area. I have to hit Kansas for good corn.

Outstanding looking plate Jeanie!
When I do corn on the cob I toss the husk with silk and all into my bbq pit. It takes about an hour at 250 degrees. If I am doing them in my oven I run them for one hour at 350 degrees. The silk and husks come right off with very little problem. Just make sure you wear oven mitts or gloves. Alton Brown mode.

You can make the simplest meals look so good!
On the corn, you'll love it with the husk on for cooking! I like to soak it for about 40 minutes before going on the fire/grill.
You'll be hooked after you try it

I bet it all tasted great but if you had used a Thermapen, an ATC device and a couple of probes, wires and an i-program, I bet it woulda been REALLY good. :wink:

Dave thank you so much!! I do love corn grilled in the husk too. When I stopped at the store to grab some, all they had were peeled cobs. Have you ever tried frozen corn? I call it redneck corn... throw the corn(husk and all) into a bag and into the freezer. When you want to cook it, place it on the grill still in the husk and still frozen. It works out great! The moisture from freezing keeps the kernels moist and juicy. Thanks again Dave! :thumb:

I didn't baste these at all. Sometimes I do but didn't this time. They turned out great.
I've foiled in the past and got more pull back on the bone and the ribs were fall off the bone tender but I like them unfoiled and just slow roasted without foil. It's my favorite way. :thumb:

Thank you Jason! I really enjoy camping, it's usually pretty quiet out there.
I haven't had a problem with critters taking food off of the grill (I'm never far away) but the raccoons get into the icechest at night if I don't place something heavy on the lid.
I try to camp during the week when people are at work. Also like to go in the spring and fall when nobody is there. I enjoy the quiet. :grin:

Thank you Smokin Ribs! I used a variety. When I loaded the pickup, I backed up to the wood pile and started throwing in anything and everything. Used some of my prized hedge posts, mulberry and even some cottonwood. lol I wasn't picky. Used most of the wood for campfires.
