View Full Version : Okay I'm a believer. Stick burners are duh-bomb-diggity.

Our church had a fundraiser for three families who have incurred a mountain of medical bills. They asked me to smoke the meat. We cooked pulled pork for 300 people and my Stumps Baby was way too small for this job. My neighbor has a nice offset stick burner on a trailer from Lone Star Grillz. He let me use it for the cook. Cooked 18 butts with a mix of hickory and oak. HOLY MOTHER OF BBQ GODS!!! Absolutely, hands down the best pulled pork I've ever done. Not even close. The depth of the smoke flavor was unreal. No way I'm replicating that on my gravity feed. No way.
The best part of the story is that we raised over $4K to give to the families to help on co-payments or whatever they can use it for. That was the best part of the entire thing.
But I'm going to have to break down and get me a good stick burner. Not sure when but I want one now.
P.S. I want to thank the brethren for disclosing how to calculate how much meat to buy. Out of meat for 300 we only have 8 hamburger buns left over. I'd say that's almost nailing it. :clap2:

Stick burners are traditional texas style pits! You can not go wrong with any of them! Glad you enjoyed it!

I miss cooking on a stick pit. They turn out some great flavored grub for sure.

I too have an offset from LSG and love it. More important, glad to hear you guys raised some cash for a good cause. Now go get a LSG.

Great job...over my short 2-yrs smoking experience, it seems my Cimarron offset makes better-tasting Q, generally speaking, than my WSM, even when using the same fuel. :noidea:

Welcome to the light my friend!:-D When properly operated there is nothing like the flavor gotten from a stick burner and I'm glad to know that your first experience with one was with an LSG pit. As the proud owner of one myself, I can say that I haven't cooked on a better cooker.
Most important lesson learned here though, is that when your heart is in the right place the Lord will provide the means to accomplish your goals. You were provided with exactly what you needed to positively effect the lives of several people and was blessed with the use of a top notch offset. It started however, with the love and charity of yourself (and a few others as well I would suspect) in organizing the event which set the ball in motion. How Christian and "Brethren-like" of you!:-D GOOD JOB!!!:thumb:

Great work on raising some funds.
I recently got a stick burner at the beginning of the year after cooking on a different style pit for years. That stick burner is hard to beat as far as flavor. And its a lot more fun to cook on.

The quality of smoke generated on a properly burning fire in a stick burner cannot be beat, it is a smooth and velvety flavor, yet not over-powering. We have multiple BBQ's, but nothing beats the flavor that my RF produces.(the only set-back, is the time they consume baby-sitting them)

Great job on the fund raiser, glad it turned out well!!
I had been wanting to build a BBQ for years and when i started reading hear i knew i wanted a RF stick burner. I finished it a couple weeks back and finally made a cook last weekend and knew right away a made the right choice!!

I recently picked up a smaller stickburner, and I have to agree with you on the difference in product produced. Don't get me wrong, I love my gravity fed cooker and the convenience of being able to sleep through overnight cooks that comes with it. However, I have found (and my friends agree) that the quality of the product from the stickburner is superior thus far.

Yeah, I have to agree with you on this. I just couldn't get over the difference in depth of smoke flavor in the meat. I've cooked no tellin' how many pork butts on my gravity feed (which I love) and I've yet to get the depth and richness of smoke flavor that I got when cooking on the stick burner.

My wife swears that when I smoke on the UDS it's better. I like the stickburner myself but it's a matter of preference.
By the way how long did it take to smoke all those butts? That baby is packed - curious as to how much longer it takes to cook when you have that much meat in the pit.

Well, to be honest it was my first time to ever cook this much meat and my first time to ever cook on a stickburner of this size. Yeah, risky I know. But I had read so much about how to operate them on this board it came natural as to what to do and how to manage the fire.
We screwed up and put the bigger butts the furthest from the fire and didn't realize it until midways through the cook. The smaller 8 lb butts that were toward the front finished in 8.5 hrs and then we moved the bigger butts closer to the fire box and they ended up finishing around the 10-10.5 hr mark.
