Decided to make some shredded beef tacos since chuck roast was on sale at Publix.
I seared the chunks of chuck in a cast iron pan with some oil and salt and pepper.
I'm doing one spicy and one mild. I imagine you can guess which is which based on the pictures!
I'm going to give them a couple hours in the smoke low n slow and then kick the heat up and foil so all the goodness melts together and makes a hopefully very yummy juice to go with the meat.
I may even re-fry the beef after I pull it before putting it into the tacos via some oil in the cast iron pan and high heat. It seems like that gives it a next texture.
