With all that talk about Hatch chiles, I got a craving for some Rellenos. I used some poblanos and also made a few flautas since I had the oil going. Some cheesy beans, rice, guacamole....I used Cowgirl's batter recipe, but my technique is nowhere near as good and refined as hers. These things came out Texas sized!:heh: They were stuffed with muenster cheese and some cheapy, greasy chorizo I had rendered down.
Now enjoying the cool evening air and having some beverages with Mrs. B!

If did not suck!:thumb:

I also used Cowgirl's cooking method where you plop some batter on the oil then plop the relleno on that and then add more batter on top and spoon the oil over it to cook it off. This batter took off. Kinda like a can of that expanding foam! Not a bad thing since that crispy batter is so good!

I kinda screwed up the batter a bit and that may have been it. After whipping the whites, I figured well, add the flour to the yolks and beat then add em in. I made yolk plaster. Lol. I thinned it out with a bit of water then beat em back into the whites. Maybe I whipped a ton of air in there! :noidea:

I'm thinking I just put too much on the top plop of batter. :-D

Burp!

Thanks again,
Bob

You, my Texican friend, are about to inspire me, you know. Rellenos are one of my all time favorite dishes, from any cooking style, yet I've NEVER tried making them. I just may well give them a go now.

You sure do know how to make a man hungry. It's a shame you don't' know where to find any hot sauce. :heh:

Looks great, brother!

Bob that looks fantastic!! How did you like the spoon batter method?
It's a lot easier for me than dipping em, especially when I stuff them too much.
Yours look fanfrankentastic!!

I just think it's one of those foods you need to make often to get the hang of em. Jeanie's batter is super easy to make. I think maybe using some smaller peepers and or stuffing them a bit more would have helped my attempt a bit more.

Jeanie, spooning the batter on was a lot easier. Less messier too. As much as I love poblanos, I think long greens are better suited for rellenos. Easier to work with. Spooning the hot oil over em was easier then flipping em to.
I will definitely be making them again soon!

You sure did a great job Bob, looks delicious!! Did I mention you still need to adopt me?
I like the long green chilies too, they are my favorite for rellenos. :)

Thanks again everyone! :thumb:

My rice recipe might be out there somewhere.

I used regular white rice. 1 cup to 2 cups water. I first toast the rice in a little bit of oil. Once toasted, I add one small can of tomato sauce, and the water. Watch out for the sizzle!
Then, I add garlic and onion powder to taste as well as black pepper and salt.m lastly, I add a bit of cumin and capers. I love capers in my rice. From there the key is drop it to a simmer, cover it, and just let it cook. Check the rice for done ness and add a tiny bit of water if it needs it. Otherwise, if it's soft and there is liquid left, just pull it off the heat and rest. :thumb:
