Making Szechuan pickled salad, so nice chance to demo the knife too!
This is a 300mm Gyuto, my main workhorse.
That's 11.8 inches !

Finely sliced cucumber; You can see how thin you can slice with these knives, even though it's the biggest knife in the range!

Everything was done with the big Gyuto, including peeling the ginger.
Just wanted to demonstrate the value of a good Japanese knife.
As you can see, it is not shiny and perfect, it shows all the signs of use in high carbon.
They discolor in 60 seconds , but man are they a wonder when put to work...and that is what they are for.

Good work with a quality knife. Got to love those carbon steel knives! My favorite carbon steel is an older Old Hickory. Bought a whole set of 8 knives with a butcher block from Goodwill for $9 about 2 years ago. They all have a great patina coating on them, and as long as I hand wash and dry them when used, they will and have not rusted. Not as nice as your big Gyuto, but for the money invested, I like them better than my much more expensive stainless steel German made knives.

Good to see someone appreciates quality knives as I do.

Great knife skills.

I need to get a whetstone and learn how to sharpen my own knives. Last time I paid $30 for the guy to bring his truck and sharpen all my knives.

That is an excellent choice!

I cut myself as soon as I wash the knife for the first time.
It's a tradition, my blood gives life to the blade and forms our bond.
It never cuts me again.

Superb hand skills!! I just ordered one too. That 70/30 double bevel edge will probably be sent to a professional for sharpening. I doubt I could stay right on that 70/30 bevel edge. I'll stick to sharpening my 50/50 bevels.

I use Japanese whetstones to sharpen.


You could choose a quality steel like VG-10 knife.
They are excellent performers and are very resistant to rust and deterioration.
I don't care about the looks, I just want the performance.
