Baltimore pit beef time. I'm looking for a recipe for tiger sauce that traditionally goes on it. It's got Horseradish and mayo it think. Anyone have a good tiger sauce recipe?

No but if you have a Hollywood Market in your area they carry it
I really like the stuff
Its kind of light red in color so I am not sure whats in it

I really like that tiger sauce. I mix it 50/50 with my bbq sauce.
I'm looking for the other tiger sauce, it's the traditional topping for pit beef.

Sliced thin, topped with onion and a mayo/horseradish sauce. It's traditionally bottom round but eye of round was on sale for half the price. It's grilled lid off over a hot fire and yes it's supposed to have that char.

Google fu answer:
1/2 cup mayonnaise
1/2 cup prepared horseradish
2 tbs dry mustard (Colemans)
2 tbs sour cream
Mix together and away you go.

I lived in Bmore for about 5 years and that looks close to right. There isn't enough color for anything else to be much of an ingredient. I have to admit I haven't been able to replcate, so i think Chaps uses something we aren't thinking of as a secret ingredient.
Althought not traditional I also add about 1T of sandwich hots to the sauce.
To be clear--in pit beef country (MD, PA, VA) tiger sauce is a white horeradish based sauce used on pit beef sandwiches, not a red sweet and very hot oriental sauce.

You may want to try adding a little lemon juice to that concoction as well. A little extra acidity will go a long ways to brighten that up.

Try substituting fresh whipped cream instead of the mayo with the addition of horseradish.

Pit Beef, what's that? :P
Tiger Sauce is 50/50 Mayo and PREPARED horseradish. Add a splash of lemon juice to taste. Some poeple will add a little bit of yellow ballpark mustard too.
For whatever it's worth, I like my pit beef sandwiches cooked medium on a sweet kaiser roll with raw white onion, a little bit of prepared horseradish, and some bbq sauce with a side of boardwalk fries. Can't beat it!
