View Full Version : First attempt at MOINK Balls

I decided to try my hand at MOINK balls for a work carry-in. All in all they were a fail in my book but hopefully edible. IT all stared with Italian style meatballs, little cheap bacon and some rub.

I got the 18.5" Weber fired up and threw them on. I was cooking away and decided to open the lid and flip them, instant grease fire. oh fark what now....so I threw the lid on and snuffed it out, closed all bottom vents and than opened it to flip. Flipped them over and opened the vents back up. About that time I hear my little one (9 months) screaming like he was getting beat so I ran in to see what was wrong, he did not want to go to bed so I picked him up and took him out to help me finish cooking, what I did not know is I had been gone longer than I thought, Too late, bottoms are burnt, well fark what now I just ruined 3/4 of them....so I flipped them, lathered them with SBR cut with AJ and let them setup. I hope they are edible to others...I tested one and it was not terrible and I would eat them no problem but could be MUCH better.

I threw the last few on after I got the little one down and finished them up, they turned out MUCH better. I guess if the co-workers do not want to eat them the dog will have one heck of a feast tonight when I get home.

Sorry they didn't come out as planned. My advice would be to put all the coals one one side of the kettle, then put all the MOINKS on the other side with no coals under them. You want to smoke them using indirect heat.

^ I was going to say the same thing, and to add, you might want to try thinner bacon, the bacon takes longer than the meatball to cook.

Yeah that bacon is gonna get overly crispy (read: burnt) quick over direct heat.
I always do MOINKs over indirect heat or at least on the UDS where even if it's direct, it's not going to flash and burn.

Sorry it didn't work out for you, but hey......at least you get to TRY AGAIN!!! :thumb:

I usually do regular meatballs, not the italian style. How did the italian style taste for the ones who has tried it?

I tried my first ones last weekend also. They seem to get dark pretty quick at least mine did too. They tasted great so I will just have to keep a better eye on them next time. Like everyone else said try them again because mine were delicious just not the color that I desired.

Well....TECHNICALLY.....true MOINK balls are done with Italian style meatballs.
I've done both. I prefer the Italian style as they have a little bit more flavor than straight up plain meatballs.

Aim for no coals at all under the goods & I think it'll go swell....firebrick is just to hold up grate for easy wood additions............

Here's my first attempt. I used "dinner sized" Italian meatballs with half a strip of bacon. Very delicious.

I made my first ones last night using jalepeno meatballs. Awesome
