They were good, but could be better.

Next time, I will go with smaller potatoes which would ensure the potato is cooked more thoroughly and offer a better filling:potato ratio.

Still a work in progress, but I like where it is headed.

Definitely needs more filling to potato. Looks like a great idea though!

what about ... cut it in half.. boat it out.. fill it put halves together then bacon wrap it of course... HMMMMMM
