I was going to try salt & pepper only brisket today but my friends are not into real peppery food.
They love the texas bbq rub grand champion when I use it on pork . I was wondering if I should use that or if I go salt and pepper the pepper will not be so strong?

Just cut back on the pepper if that is the only issue. I know a lot of folks like their briskets with just the salt and pepper, some go with SPOG. Lots of choices, just go with what sounds good to you at the time:-D.

Thanks. I would use the Texas bbq rub but I'm worried with it being sugar based it may burn since I'll be cooking at 300.

To answer your question a bit more seriously. There is no reason a 50/50 by volume should be too peppery. Do what makes you happy.

Generally, salt and pepper with maybe a little garlic powder.
Franklin's in Austin usually uses just salt and pepper.
