I know we can make most anything with our smokers. I have a great cook book called Pit Que Company. They are out of London, I think. They have some really great veggie dishes and was looking for more. Being in the NW I have a lot of veggie friends. I want to cook more stuff for then. Veggie patties? Apps? Sides? I'm looking for more interesting ones.

Not very interesting,but my favorite is just grilled veggies on the smoker. Toss with olive oil and your favorite seasoning. The best IMO.

I know the vegitarian crowd likes trying to turn non-meat into near-meat like tofurkey or whatever that abomination is. I say whatever to that trickery, if you want to eat vegetables then just eat vegetables, I don't try turning my steak into an eggplant/black bean puree. I love a great oversize platter of grilled vegatetables, italian antipasto style. Talking roasted peppers, grilled zucchini, eggplant, artichokes, endive, fennel, asparagus, red onions quartered, etc, drizzled with some high quality cold pressed olive oil and balsamic or balsamic reduction and sprinkled with sea salt flakes, along with some crusty bread and good fresh mozzarella. It isn't rocket science, it all comes down to a few simple quality ingredients and simple well executed preparations, the key to great italian cooking. The italians invented good food boys, regardless of whatever the french think.

My brother used to have a sausage and pepper concession trailer and he would always soak whole portabello caps in rasberry walnut vinagrette, and grill, serve on a bun for the veggie crowd.

Balsamic vinegar and extra virgin olive oil is also great on the portabello caps. So is Zesty Italian dressing.
I agree with Tailgatejoe. Use real veggies.
The grilled platter sounds great.
You can also grill potatoes, sweet potatoes, butternut squash, etc.

I have roasted eggplant on the smoker and it comes out great. There are a lot of recipes that use roasted eggplant, make one of those but with smoked eggplant.

Grilled portabello's are a great way to make entree dishes for vegetarians.

Are your guests strictly vegetarian or they pescatarian(fish eaters)? One thing you can do is smoke/grill some fish or scallops up and then really make the dish pop with some romesco sauce. Actually any grill veggis, fish, meat go well with Romesco sauce.

Portabellos, egg plant, endive, radicchio. Just olive oil, salt and pepper. Maybe some balsamic vinigar. Smoked cabbage is awesome. You can make some great roasted salsas too.

Peel a bunch of garlic cloves and put them in a heat-proof open container and put them in your smoker. The garlic cooks down to a smoky garlicky goo. Serve that to your vegheads along with bread and whatever else. You'll have to experiment to find out the timing, but I have a buddy who swears by this.

I also suggest you look at Turkish or Lebanese recipes. Those cultures derived from people who always cooked over fire, and they grow great vegetables.

I have always had great luck roasting baby carrots and Brussel sprouts. I shave the stem end of each sprout with the knife so it is clean and new. I cut the sprouts in half top to bottom. I also pre-steam them a bit, or just cook them in a microwave bowl for a few minutes. Toss the lot in a bowl with a little olive oil, freshly cracked sea salt and black pepper, then lay out on a cookie sheet and roast. You could try the same thing only laying them out on a smoker rack and see how they taste roasted with smoke. I generally make a topping of plain yogurt flavored with 1/2 clove garlic (minced) per 2 cups yogurt, and some salt. Just a little garlic and salt really transform yogurt. This is a trick from the Ottoman chefs and it's really amazing on roasted vegetables!

One last thing - when I want to grill onions, I peel the whole onion. Then I get out four bamboo skewers. I put two parallel to each other, each about half an inch above the midpoint of the onion. I put the other two parallel to the first two but half an inch below the equator. Then I slice the onion in half right through the equator, and make two more parallel cuts to remove the tip and root. Now I have two almost half-onions which are securely pinned together. I grill them like this. That way they don't fall apart which always means the small inner bits fall through the grill and make a mess.

If you can find or grow LARGE zucchini, then split, hollow out seeds & fill with rice or small pasta & onion / sweet bell bits, foil & bake, open up & smoke for part of the time....................

Chopped up small gold potatoes, videlia onion, jalepenos, chopped garlic. Drizzled some olive oil on and a little bbq rub.

Thanks for all the suggestions. My wife and love doing potatoe packets. In the Pitt Que book the have lots of chared and smoked greens which I need to try.
