Picked up a 14lber from Kroger last night. Salt and Pepper'd and ready to go on tonight.

list price of $3.49 / lb and picked it up on sale for $1.99 / lb.

She's in the fridge right now.. I'll put her on tonight and update as I go along..

Sounds like a plan. Did you trim the hard fat (hard to tell from the pic)?

I trimmed some of it..

I could probably trim more but scared to death of taking too much off (I'm not butcher).

Maybe I'm wrong but I'm thinking I'm safer to be conservative with the trimming instead of too liberal..

Just be sure to get rid of the really hard stuff on the edge and get rid of the plug. If you are cooking at low temps, it will render pretty good, but if you are cooking fast it is best to get rid of as much as you can.

Nice score. I also picked one up at $1.99/lb this week. Always feel bad for the folks who report paying $5/lb and higher for a packer.

What grade are the ones at Kroger? The only ones left at Walmart for $1.97/lb are Select.

Also, if you are looking at how to trim up a brisket, this video from Franklin gives you a good idea of what to do.

Just like Walmart, it depends on the store and the day. Sometimes they are all select, other times all choice and sometimes mixed. Their select are OK if you get a good one.

If your afraid of trimming and it's one of your first briskets, don't trim it. That fat works as a good heat protector.
