Welcome hillman,
I like to brine mine overnite in a salt, orange juice and rosemary brine. On the Traeger with apple pellets 275 till trukey gets to 160. Good luck and take some pics. :tea:

I dont brine but I do use a water pan in the uds to protect the precious bird from direct heat. I just do the traditional turkey day stuff without dressing salt pepper a little sage @325 and roll till about 160~

What gear are you cooking with, hillman?

I did one last Thanksgiving, brined overnight with salt, brown sugar, peppercorns, sage, rosemary, and thyme and then stuffed the cavity with more of the same and some oranges. Coated it with some compound butter, and then cooked it at about 350 with some pecan wood for about 2.5 hours. It came out awesome. Good luck!
