I scored some tonight, and they look like mini beef shorties. Wondering if anyone ever did these before. I bought 3 packs of them. They are gonna be good!:mrgreen:
That is a retail cut I have never seen in Florida. Of course, being pork, they will be good.

They look like spare ribs to me, St. Louis cut.

They look like they were trimmed using a band saw.
Looks like the meat unpackers at the store hacked up some spare ribs thinking they were beef short ribs, then realized they were pork.

They look a lot meatier than spare ribs. Like I said, they look exactly like mini beef short ribs. I'll post photo's Saturday when they become victims.

Not pig wings. You can see the "knob" at the bottom of the rib. Only one knob on a rib...............

I agree with what others said, these are spares trimmed down and cut in half again. You can see the "flap" of meat that is always on spares.

We get those up here in Canada. Essentially st louis cut in half, and for whatever reason they (large grocery store chain) call them "pork ribs: sweet n sour cut" :shock:
