depends on your budget - but

For the UDS, I use a 12" turkey deep fryer thermo, just under the lower cooking grate. It fits through a 1/4"-1/8" brass hose barb mounted on the wall of the drum. I had read the probe length gives a better idea of the temp in the center of the drum.
When I get a replacement pit probe for my Maverick wireless, I'll start using that too.

I like these river country 3" thermometers on my stick burner.

They have great customer service. Mine got water in them during a very heavy rain. River country mailed me two replacements very quickly. I try to keep them covered in heavy rains now. Have not had any more problems. The thermometers read true.

I also would say river country. I've been using them for years and you can't beat them for the price.

I use the Old Smokey brand. Mostly because I can get them in town at the Cabela's. They seem to be pretty accurate judging by my pit probe and I haven't had one get foggy yet.
