I am making baked beans from scratch. I did this last year too, but I could not find my notes from last year. Anyway, I presoaked the beans like you're supposed to, but I did not cook them before mixing them with other ingredients and sauce. If I remember right, now, I pre-cooked the beans last year. Did I screw up? If so, can it still be saved? Maybe longer time on the smoker? Any help is greatly appreciated!

As long as you didn't add any salt you'll be fine cook 'em at a simmer . salt makes beans tough and boilin pisses 'em off and makes them tough as well.

I was planning on putting them on the smoker. Should I simmer on stove first? If so, how long should that take?

I'd simmer on the stove for an hr or two bring them up to a low boil then back off the gas to a simmer. it will cut down on the coo time on the pit

+1 on Bludawg's advice. Worse case scenario is that you're up all night with a wee bit o' gas pains
