So then.

1 x 8lb butt

1 x roughly 10 / 11 lb butt

We're 6.5hrs in. Should I flip the beasts over?

I'd love to know your thoughts brethren....

You really don't need too as they are bathed in heat.

Some people do, many others don't because it causes the cooker to loose heat and then recover from it. I start my butts fat side down to form a good bark on the top, but after the stall is over and the bark has great formation I flip fat side up. It isn't really necessary, but that's the way I've done it for 20 years and I like the results. It is simply my personal choice.

Did you start fat side down? It seems to me fat side down. If so leave them in peace!

Just leave them...no reason to flip the meat, they will be just fine.
