Any advice would be greatly appreciated. I am smoking ribs for the first time Friday. I have been smoking butts, fatties, briskets, and abts with success just haven't dove into ribs. we are going on our annual floating camping trip. I'm going up early Friday and was going to smoke ribs for everyone else to eat when they showed up. otherwise they will eat fast food. Thanks in advance

Do you have a plan on how you are going to cook them. We need more details. What temp, what are you cooking on, how many racks, what time frame do you have to get them done?

Probably wouldn't hurt to know what kind of ribs either, Spares or BBs ?

sorry st Louis style about 6 racks I should have around 8 hours or so was thinking 3 2 1

using my uds usually runs around 250-275

Salt and pepper rub, light sugar, light paprika. Bbq 275-300* for up to 3 hrs or until they past the bend test, sauce on the side.

wash 'em rub 'em smoke 'em at 275 St Lou's take 3.5- 4 hrs on average till they pass the bend test no foil.

3-2-1 is NO Good! its for 225* full spares.......they will be way overcooked.

at 275* they should take 3.5-4 hrs........nekkid, no wrapping, bones down or standing on edge. . Just a Good Rub like Plowboys Yardbird. Till they Bend like:

My friend, 321 is fine for spares IF you do them at 225 or thereabouts.

that's y I said its for 225*.........now you can do a variation of 321 like 2-1-.5 or such at 275* - but I quit wrapping Ribs........

Hehehehe, my apologies. I mistook your meaning. Thought you were saying that even at 225, they'd still be overcooked doing 321 :oops:
