This is something I almost didn't want to share. There's no grill or smoker involved. :(

Some of you guys may think it's weird or nasty.

This is a dish that we make when the weather gets a little hot.

First we start with a jar of this. Pork skins in brine ( cueritos) . Drain and rinse.

Light chop the pork skins ( cueritos)
Then chop some onion, jalapeno, tomato, cilantro. Lemon juice and add salt and pepper. Mix and let them be happy for at least 1 hour.

Then on a tostada add crema Mexicana and refried beans. Then add your cueritos and top with cotija cheese and tapatio sauce.

Tony I'd eat any of those Mexican style dishes! I wish i knew more Hispanics because those dishes make my mouth water. That looks OUTSTANDING!

I too, would be all over that in a heartbeat. And the radishes did it for me too.

Love cueritos. Chiilindrinas are great for the warmer months. I like em with lime and hot sauce, Valentina! I bought a jar the other day.....my son was not a fan. Lol

Tony that just looks awesome. I'm not Hispanic but I'm a Californian with Mexican tastes. In my backyard, I have growing Tomatillos, Jalapenos, Tomatoes, Serrano peppers. I grow all of this so I can make an awesome Pico de Gallo (about a big bucketful, which I give to my neighbors. In return, around Christmas, some of them give me their home made Tamales. What a wonderful trade? Fresh tamales. Yum!

It looks too healthy to me! Im not used to all that veggie! BUT as usual it looks delicious.
