Nope.....
I'm feeling a bit creative today. It may take a little longer, but not much.

This is a thread about having fresh herbs at you're disposal for those special times. It doesn't take much space for a small herb garden.

Oregano, basil, thyme, sage.

Get a pile going and mince it up. I decided to add in some garlic.

Then make a paste with your herbs and olive oil and I added some high quality fig infused balsamic.

Salt and pepper your chicken, then rub that glorious paste all over. Get under the skin and everything. Yea! feels good!

Cook in indirect heat on the Kettle. I put foil under to catch the drippings, but more importantly, a small piece of red oak on the coals for a kiss of smoke.

When the chicken was done, I moved it over the hot coals for the final color.

Fresh herbs make a nice garnish too.

A simple Friday night dinner that was kicked up a notch.
Chicken with parsley potatoes and green beans.

The chicken looks great. I agree, you gotta have fresh herbs. My herb garden is smaller, and I have more than I can use.

Aprox. One hour at 350-375 indirect heat and covered. But I recommend you get a good instant instant read thermometer and cook by temperature.

Great tasting, healthy, easy on the wallet, and cooked on a Weber kettle. That is a home run in my book.

Fish, I LOVE what you did. I love that you showcased your herb garden as part of the thread!! :love: I hauled a bunch of free concrete blocks to our place to make a few raised herb beds and still the darn things sit waiting for me to breath life into them. You are an inspiration, brother! Your meal looks fantastic and that chicken looks absolutely delicious. :dancer:
