View Full Version : Double Portobello Caprese "Burgers"

We had hamburgers the other night and used some ciabatta rolls that we bought at the local Super Walmart. These rolls are very good! They come in a bag of 6, so we had some left and I didn't want to do hamburgers again, so I decided to go somewhat vegetarian.

I cleaned the gills out of some portobello mushroom caps, brushed them with olive oil, seasoned them with some salt a pepper and grilled them until tender.

Then I added some fresh mozzarella cheese and let it melt. I also brushed the ciabatta with a little olive oil and grilled them lightly to get them crispy.

For the sandwich we slathered the roll with pesto, put on a couple of cheesy mushrooms and then added some slices of heirloom tomatoes.

We had Captain Ron's Apple Slaw on the side.

These "burgers" came out great, but would have been better with some fresh basil added.

I've grilled portobellos before to excellent results but never thought about cleaning the gills out. Tasted fine to me but was I supposed to do that?

I didn't like the texture more than the taste, plus it made more room for cheese :-D

P.S.

FWIW my go to portabella recipe adds some garlic, balsamic and rosemary .......... and marinates for hours.

don't know how the rosemary/balsamic would go with pesto on a burger, however. i'd say go one OR the other.

Again............beautiful burger.

those look great Ron! I usually go with sun dried tomatoes on my portobello burgers...might have to try fresh next time

I didn't this time :tsk: I couldn't find any decent fresh basil in the store and our plants didn't survive indoors this year. I bought a small jar at Trader Joe's. Not bad, but home made is much better. Fresh basil leaves would have put the sandwich over the top, too. I'll try it again over the summer.

I love to grill portabello mushrooms. But I marinate them first. Let's see .. ah, here:

olive oil, balsamic vinegar, oregano
can add flavor enhancers like minced capers, red pepper flakes or cayenne

I marinate them in a gallon ziploc bag for at least 30 minutes. They smell terrific when they hit the grill and they taste like steak.

They were pretty good. They were on sale at a local gourmet-type market but I am sure they are either hot house grown or from somewhere warm :-D

Ronelle, Outstanding pron as usual. Plating some basil a few days ago. Perhaps if you make me a few of those burgers, I'll trade ya some of my basil?:roll:

Probably be even better with a slice of naked fatty tucked inside each of those ports. :thumb: But for a vegan lunch, that looks seriously good there Ron-O.
