View Full Version : My try at BluDawg's Brisket

I gave BluDawg's brisket method today...
Fired up the Traeger to 300 with apple.
Trimmed up a full packer and rubbed down with SM Cherry and topped it off with some SM Peppered Cow.
Then into the Traeger for 4 hours...
Have no butcher paper, so into a brown paper bag for 2+ hours till the thickest part of the flat was probe tender....
Here it is after it rested for about 2 hours...

Drier then I had hoped for, but as I got further in the meat for juicer. Can't wait to slice into the point... but that will have to wait.

I do believe this is the fastest brisket I have ever made.

Looks real good to me. Since it was getting moister in the thickest part, it sounds like you might have had a thin spot at the end that got a little overcooked. Nothing you could have done about that.

Echoing the pronouncements of all the others- that does look great.
On a side note, I think you should lay off the shine, it's beginning to age you.
