View Full Version : First Attempt at Brisket on the UDS.......SUCCESS!!!

So I picked up a small, cheap packer brisket at Wally World the other day ($27) for my first attempt. Fired up the UDS this morning and trimmed the brisket and rubbed with simple salt, pepper, parika, garlic rub and on she went at about 275 degrees at 8 AM. By 12 she was reading 170 and came off for foil. By 1 she was ready to come off and rest. I guess the short cook was due to it''s small size. But let me tell you, it is moist and tender and full of flavor. I mixed the burnt ends with some Sweet Baby Rays and drippings and it's on the smoker now in some foil. Thanks to this forum it was a success and the BEST tasting food I've cooked on the UDS yet!

The burnt ends were awesome! I never quite understood what people meant by "meat candy" until I ate some burnt ends. We actually didn't eat the rest of the flat until Saturday for lunch but even a day later and warmed in the oven it was awesome. I just wish it wasn't so expensive or I'd make it every week!
