So. Today I'm cooking a leg of lamb in the kettle. Gonna slow roast with some apple wood chunks and Kingsford Comp. This is just the start because it will be an all day thing. Started with your basic American raised lamb leg...

Made a rub with celery salt, cracked black pepper, white pepper, lemon pepper, garlic powder, kosher salt and ground thyme.

Gave the leg a little trimming, put a little rub in the gaps and trussed it up a bit...

Rubbed it down and basted it with olive oil and a touch of apple cider vinegar...

So now it sits in the fridge for a couple hours or so when I'll start the kettle. Oh, and since it's my birthday, Redhot got me this...

Lamb is up to 77 (Started at 41) and the kettle was bumped to 300. Got some nice smoke. No pics of it yet as I'm not gonna open the grill for one. Just lettin' it ride.

Lamb is at 100 IT. Kettle is still rockin at 300 +/-
and will pull off the grill around 120ish IT for the climb during rest.

We have...NANNER PUDDIN!!!

Went into a 375 preheated oven which was turned down to 350 as soon as it went in. Took 8 minutes.

Got it loosely tented with foil for 20 minutes. Now, just need to stir fry the sliced onion and mini bell peppers in tome hot oil and toasted crushed red pepper flakes...

Lamb climbed to 135 and stayed there. :thumb: Peppers are cooked. We're about to plate.

Whew, that's much better. Felt a little weird for a minute there :wacko:. As I was going to say, that's only the second time I've made pudding from scratch and my first attempt at meringue. Turned out pretty darn good! :bow:

Thanks everybody! Redhot's going to look for and post the recipe and link she found for the puddin. She sifted through a bunch before deciding on one, as the last time she had made pudding from scratch was a few years ago. Banana pudding is basically a vanilla pudding though, but you've got to have ripe bananas so buy them several days in advance if they're shiny yellow. The ones I got Thursday had just started browning just a tad on the skins so they'd be ready by Saturday. Use the good Nilla brand wafers too, or your favorite if you have a good local brand. Makes a difference. The pudding takes a while to make on the stove top, and it seemed like she had to watch and stir it with the whisk just almost constantly. Kinda like risotto in a way: it's right when it's right. Watching Michele make the meringue was fun though. All in all, I think she put more effort in that one dessert than I did for the rest of the entire meal. It was gooooooooooooood. It will be even better today.

Thanks Bob! That recipe is close, really most banana pudding recipes are similar, but it was the folding in of the meringue that intrigued her. She'll post it in a bit when she gets back from an errand she had to run. :thumb:

Forgot to answer George. Total time on the grill was about 2~2 1/2 hours at the temps I cooked for the 7 1/4 lbs it weighed. Since it finished around 300 pit temp, I pulled it at 122 IT by the time pics were taken on the grill. It climbed an additional 14 degrees as it continued cooking during the rest. It stayed at 135 for about ten when I posted, but crept up just one more degree before we sliced and plated.

Sorry I didn't post the banana pudding recipe I used last night, it was pretty late last night when Guerry posted the pic.

Here's the link to the recipe I used. The recipe's history is a neat little read too. I never got a recipe from my mom or granny so thought I'd try this one. It is a bit time consuming, but well worth it. Very easy, rich and fantastic! I WILL be making this one again...and again!

FYI: I did not use pasteurized eggs. Yes, I did put half the meringue in the pudding though the eggs were not pasteurized, that's what made it sooooo incredibly yummy I'm sure! I used real brand name Nilla Wafers. And I did not use a double broiler (as deguerre suggested), you don't need one as the use of corn starch instead of flour not only makes for a much smoother pudding, it also doesn't scorch as easily :thumb:!

My only regret? I didn't make a double batch! :doh:
